The design fosters an immersive experience. Guests watch chefs in open kitchens and dine at communal tables, mirroring Montreal’s culinary scene. Highlights include poutine with local cheese curds and smoked meats from Schwartz's Deli. Les Délices de l'Érable offers maple-infused items, celebrating Quebec’s signature ingredient. Chef François Lemoine notes, "Every ingredient tells a story, and we want our guests to experience those narratives through taste."
The hall participates in seasonal festivals like "Taste of the Market," featuring local produce. This enhances dish freshness and educates guests on local sourcing.
